I bought some cheapie bean starts from the grocery store this spring, I was complaining that nothing was happening, then the long bean emerged. Now Ive got a crop of hilariously long beans. I tried this one and maybe it wasn’t ready yet as there was a sort of paste in-between the beans pods and nothing was really defined. Edible but not enjoyable.
Anyone have long bean experience?
Some beans are meant for eating green and whole, some are meant for eating freshly shelled, some are meant for shelling and drying, and some are a double or triple threat.
If you grow a bean that’s meant to be cooked in the pod, you need to pick relatively early, otherwise they can get stringy.
If you pick a bean that’s meant to be dried too early, they will be underdeveloped.
Try to find out what type you have. Judging by the fact that they are so long, and that you bought them from a grocery store, I’m going to guess that these are yardlong/snake/noodle beans from H-mart. A quick read on those shows that they are normally eaten young and whole as a green bean. If you have some that are really big, they might be too far along, and you’ll need to wait for them to fully develop so you can shell them.
Tl;dr, like the other commenter said, you picked too early and too late.
So that’s a Chinese yard long bean or also called an Asparagus bean. You generally want to harvest them at 12-16 inches long and about the diameter of a pencil, although I’ve definitely eaten them when I let them go longer. Generally taste just as good but they get a little tougher.
Definitely want to cook them in the shell, I normally cut them into manageable bits and then use them in stir fry or like green beans.
Your variety is probably Chinese Red Noodle Asparagus (Yardlong) Bean based on the picture.
